Country Potatoes

- 4 potatoes (chopped ½inch cubes (See note 1))
- 1 red bell pepper (finely chopped)
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- ¼ tsp garlic powder
- 1 small onion (finely chopped)
- 1 tbsp chopped fresh herbs ((see note 2))

Preheat oven to 450ºF/230ºC.

Spread in a single layer on a sheet pan or large roasting dish, and cook for 15 minutes.
